Chef and owner of The Exchange Food and Drink in New Brighton, Kyle Nelson, shares a recipe for marinated skirt steak tacos with chili lime quinoa as part of Twin Cities Live’s 12 Days of Grilling, presented by the Minnesota Beef Council.

Marinated Skirt Steak with Chili Lime Quinoa Tacos

Equivalent 5 pounds of steak for marinade measurements

Marinade recipe:
Half is for beef, other half will be mixed with sweet corn and quinoa

1 1/4 cups fresh lime juice

3/4 cup honey

2 TB sugar

2 TB dijon mustard

1 TB granulated garlic

1 TB Kosher salt

1 1/4 tsp black pepper

1 1/4 tsp cumin

1 TB chili powder

1 tsp red pepper flakes

1/2 cup chopped cilantro

1 jalepeno, seeded and chopped

3 cups oil
