Minneapolis-St. Paul metro area is the raspberry consumption capital of the country. Driscoll’s found that the Twin Cities market consumes 132 % more fresh raspberries per household than the national average.
Henry Yeung is a sensory analyst or “Joy Maker” at Driscoll’s. He spends his days tasting and talking to consumers about the berries they love! Henry looks at how people perceive Driscoll’s berries and what they like or dislike about them.
Red raspberries are sweet and very floral and there is a little bit of tartness at the finish which completes its flavor profile.
Sunshine raspberries tend to be more tropical and they exert flavors such as pineapple, coconut, and banana. Both raspberries have a texture similar to cheesecake.
Yogurt Parfait with Raspberries and Dark Chocolate
2 Cups non fat Greek yogurt
1/2 Tsp. ground cinnamon
2 Tablespoons dark chocolate chips, chunks or chopped dark chocolate
1/2 Cup toasted chopped walnuts
1 Package Driscoll’s Raspberries (6 ounces)
- Stir yogurt and cinnamon together in a medium bowl. Spoon half of yogurt mixture into 2 parfait or wine glasses. Top with half of walnuts and half of the dark chocolate.
- Mash half of raspberries in a small bowl and layer into parfait glasses. Top with remaining yogurt mixture, walnuts, dark chocolate and top with whole raspberries.
Raspberry Ricotta Dip
1 Cup part-skim ricotta cheese
3 Tablespoons plain yogurt
3 Tablespoons raspberry jam
1/4 Tsp. vanilla extract
1/2 of a 6 ounce package (about 2/3 cup) Driscoll’s Raspberries
- Blend ricotta, yogurt, jam and vanilla with a wire wisk until smooth. Stir in raspberries to blend, leaving some pieces of berries visible. Transfer to a covered container and refrigerate until well chilled.
- Use as a dip for sliced bananas, apples or peaches, or spread on bagels, bruschetta or whole grain muffins.
