Many schools are back in session! So we want to make sure you know how to liven up your child’s lunchbox with foods they love! The Cooking Mom, Amy Hanten explains how to make traditional pepperoni pizza and a PB&J with a twist.
3/4 cup olive oil
1/3 cup red wine vinegar
2 teaspoons sugar
1 tablespoon dried oregano
1 teaspoon garlic powder
1/2 teaspoon pepper
1/4 cup grated Parmesan cheese
1 pound box spiral pasta, boiled and cooled
2 cups seeded and diced tomatoes
2 cups shredded mozzarella cheese
1/2 cup finely diced red onions
2 cups diced green pepper
6 ounces sliced pepperoni
fresh basil leaves for garnish (optional)
In a jar with a tight-fitting lid, combine first 7 ingredients and shake well. In a large bowl, combine the remaining ingredients, saving 1/4 cup of cheese, some sliced pepperoni, a little green pepper and the basil to decorate the top before serving. Best if refrigerated at least a couple hours before serving.
4 slices soft wheat bread
1/2 cup peanut butter
1/2 cup honey
3 to 4 tablespoons granola (optional)
Additional fresh fruit such as kiwi, strawberries, grapes or pineapple
Trim crusts from bread. Gently press bread or flatten with a rolling pin. Spread each slice with 2 tablespoons peanut butter and 2 tablespoons honey. Sprinkle a little granola on each piece of bread. Cut each slice in half. Firmly roll up each and thread the roll-ups and fruit onto skewers and serve as kabobs.
2 large apples, cored and cut crosswise into 8, 1/2-inch thick rounds
2 teaspoons lemon juice (optional)
8 tablespoons peanut butter
4 tablespoons granola
1/4 cup raisins or dried cranberries
If you will not be eating these right away, start by brushing the apples slices with lemon juice to keep them from turning brown. Spread one side of half of the apple slices with some peanut butter then sprinkle with granola and Raisins. Top with remaining apple slices, pressing down gently to make the sandwiches. Makes 4 Apple Wiches.
