Father’s Day Prime Rib

Find a dad and ask him if he wants prime rib… chances are he’s going to say yes! Chef Josh Hedquist from the Copper Hen shows us how you can enjoy prime rib on Father’s day or on any day!

How to make it:
Pull your rib out 2 hours before you want to cook it this helps it cook evenly.
Poke holes in it with a steak knife every 2 inches all over
Stuff the holes with fresh garlic and rosemary
Score the fat cap with a checker pattern
This will release any tension that occurs during cooking to keep a presentable shape

Season generously with kosher salt and fresh cracked pepper

Roast in a preheated oven at 325 degrees for about 1 1/2 to 2 hours

Check your roast after an hour
Let this rest for 20-30 minutes

After you let it rest turn the oven to 500 and throw the roast back in for 10-15 mins until golden brown.
