Halloween Feetloaf

Owner of Golden Fig Fine Foods in St. Paul, Laurie Crowell, stopped by with a Halloween-themed dinner idea, feetloaf.

Make it at home!

Feetloaf Recipe
1/2 C panko bread crumbs
1/2 C milk
2 lbs ground meat (beef, bison, pork etc. Whatever you prefer works!)
1 egg lightly beaten
1/2 C shredded parmesan
1/2 C finely chopped fresh spinach
1 onion save one layer for toenails and then finely mince the rest
1 carrot – shredded
1 tsp BBQ herbs
2 slices bacon
Swiss cheese (to fill ankle sockets)
Ketchup (for blood drizzle of course)


Preheat oven to 375
In a small bowl mix panko and bread crumbs together and let sit for 5 minutes.
In large bowl mix panko/milk mixture, meat, egg, parmesan, spinach, onion, carrot and herbs. Divide into 2.
Make 2 rectangle shapes and cut a little off the end and roll into ball to make ankles.
Place rectangles on parchment lined baking sheet.
Press ball to hollow out ankle bone spot and place on end of each foot.
On other end of foot, cut 5 toes and place onion on end of each toe.
Squeeze a little ketchup around top of ankle.
Make a little ball of foil to fill ankle bone space during baking.
Cover from ankle to over toes with foil
Bake for 40 minutes (until temp is around 140 in the thinner, lower foot part)
Remove foil ball, dab out any excess juice and fill with swiss cheese
Remove foil from over lower feet and cook until cheese has melted and at the thickest part a temperature gauge reads 140.
Remove from oven and let rest for 5 minutes before serving.
