Chef Ben Spangler stopped by to make a simple Monday Night Meal recipe and it’s a dish he makes at home during the week.
Ingredients:
3 oz Balsamic Vinegar
6 oz Golden Raisins
5 ea Garlic Sliced
3 oz Capers, rinsed
2 oz Anchovy Filets, minced
1 c Parsley Chopped
6 oz EVOO
How to Make it:
- Soak Raisins in Vinegar for 30 minutes
- Slice the garlic
- Drain capers and rinse off some brine
- Drain the anchovies
- Chop parsley and reserve
- Heat half the oil in a sauté pan, then add anchovies and cook until fragrant, add sliced garlic
- Cook garlic for 45 seconds or until browning starts. Try to not get any dark brown edges only lightly cooked
- Stir in remaining ingredients and let it sit for an hour.
- You can add this sauce to vegetables or chicken or salmon
