Monday Night Meal: Ben Spangler’s Sauce with Vegetables

Chef Ben Spangler stopped by to make a simple Monday Night Meal recipe and it’s a dish he makes at home during the week.


3 oz Balsamic Vinegar
6 oz Golden Raisins
5 ea Garlic Sliced
3 oz Capers, rinsed
2 oz Anchovy Filets, minced
1 c Parsley Chopped
6 oz EVOO

How to Make it:

  1. Soak Raisins in Vinegar for 30 minutes
  2. Slice the garlic
  3. Drain capers and rinse off some brine
  4. Drain the anchovies
  5. Chop parsley and reserve
  6. Heat half the oil in a sauté pan, then add anchovies and cook until fragrant, add sliced garlic
  7. Cook garlic for 45 seconds or until browning starts. Try to not get any dark brown edges only lightly cooked
  8. Stir in remaining ingredients and let it sit for an hour.
  9. You can add this sauce to vegetables or chicken or salmon
