Meal prepping sounds time consuming but it’s way less of a headache when you can toss all of your ingredients on one sheet pan. It’s a speedy dinner and clean –up is a breeze. Owner of Golden Fig, Laurie Crowell shows us some must-make meals and a dessert on one pan.
Chicken and Veggies Sheet Pan Dinner
4 bone in, skin on chicken breasts
1 bell pepper, sliced
1 onion or shallot, sliced
1 sweet potato, peeled and sliced into rounds
6 carrots (multi color is great!) peeled and cut into chunks
2 C broccoli florets
1 delicata squash, sliced into rounds
1 pint cherry tomatoes (or 2 tomatoes diced large)
8-10 basil leaves, chiffonade
2 TB avocado oil
3 TB Basil Balsamic Vinegar
Kosher salt and pepper to taste
1 4 oz piece chevre
Preheat oven to 450 degrees.
Line sheet pan with parchment paper
In a small jar, shake up balsamic, oil salt and pepper
In a bowl, toss all veggies with 75% of the vinaigrette
Take broccoli out and set aside (to add at a later time in the roasting process)
Pour veggies on sheet pan
Put chicken in bowl, pour remaining vinaigrette on chicken and rub to coat.
Nestle chicken in veggies
Roast about 1/2 hour
Add broccoli to sheet pan and roast another 10 minutes or until chicken is cooked and veggies are tender.
Place veggies on plate, slice chicken and place net to veggies. Sprinkle basil and crumbled chevre over top and serve hot.
Roasted Veggie Sunny side up egg Breakfast
2 C roasted veggies, diced into small cubes.
Drizzle olive oil in medium sauté pan.
Over medium heat, heat veggies on left side and crack 4 eggs into pan on right.
Cook until eggs are done.
Place veggies on plate and slide eggs on top.
Salt and pepper to taste.
Apple Orchard Sheet Cake
1 medium apples (I used SweeTango, but really, any will work)
1/3 C butter, melted
1 1/4 C dark brown sugar
1 C apple butter
2 tsp. vanilla bean paste
1 tsp Apple Pie Spice
1 2/3 C all-purpose flour
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 C dried apple chips, broken into small pieces
Preheat oven to 350 degrees
Grease a 13x9x2 in sheet pan.
Peel, core and shred one of the apples. Finely slice and remove the seeds from the other
In a large bowl, whisk together the butter, brown sugar, apple butter, eggs, vanilla bean paste and apple pie spice until smooth
Add in flour, baking powder, baking soda and salt and whisk until just combined
Fold in shredded and dried apples and pour batter into prepared pan.
Bake about 40 minutes or until golden and toothpick inserted in center comes out clean.
Remove to a wire rack.
Spoon maple icing over hot cake.
In a small saucepan melt 1 tablespoon butter. Stir in 1 tablespoon maple syrup, 1/2 cup powdered sugar, 1/4 teaspoon vanilla, and 1 tablespoon milk until smooth.
