1 head red cabbage, thinly sliced & chopped into approximately 1 inch pieces
3 large lemons
3 TBS caraway seeds
3/4 cup light mayonnaise
1 thinly sliced red onion
1 1/2 tsp salt
2 tsp black pepper
Place cabbage and onion in a large bowl. Add mayo, salt & pepper. Mix well. Slice lemons in half and squeeze juice into cabbage mixture and mix. Add the caraway seeds and toss well to thoroughly combine ingredients. Serve and enjoy!
French Ham & Cheese Sandwiches
1 long French baguette, sliced lengthwise
1 pound thinly sliced pit ham (or ham of your choice)
3/4 LB thinly sliced Provolone or Swiss cheese
1/2 stick soft butter
CGD, Crazy Good Dressing (optional)
Generously butter both sides of baguette. On bottom half, layer ham slices – no more than 2 slices thick. Layer cheese slices on top of ham. Wrap sandwich in foil. Put the sandwich in the refrigerator and put cast-iron pans or any other heavy object on top of the sandwich. Leave a few hours or overnight.
When ready to bake, preheat oven to 350 degrees. Unwrap sandwich. Open up and brush CGD on both sides of the baguette. Wrap the sandwich back up & bake for approx. 45 minutes. Remove, unwrap & cut into 3 inch slices across to yield 8-10 sandwiches. Serve and enjoy!!!
Killer Mac ‘n Cheese
1 box curly pasta, cooked
1/2 package Velveeta cheese
1 8oz package shredded Sharp Cheddar Cheese
2 TB butter
8oz sour cream
1/3 to 1/2 cup half & half or milk
In a large pot combine cheeses, sour cream, butter & half & half. Cook over a medium heat, stirring constantly until cheeses melt & ingredients are combined.
Add cooked pasta to cheese sauce, stir to mix thoroughly. Continue cooking over medium heat for about 10 minutes. If not serving right away, or you want people to help themselves, put finished killer mac in a crock pot on medium low heat. Just stir occasionally. It’s ready whenever you are!
