Korean BBQ Pork Butt Wonton Tacos

1 Pork butt seasoned w/ salt & pepper
Roast in oven for 1 hour
Add Korean BBQ
Cover, then roast for 2 hours until tender
Then cook wonton into taco shells
Asian Vegetables: Bok Choy, Napa Cabbage, Carrots, Water Chestnuts, Bamboo Shoots, & Baby Corn

*** Julienne & 1 Cup of each**

Korean BBQ Sauce

1/4 Cup Soy Sauce
3 Tbsp Sugar
1/4 Cup Chopped Green Onions (optional)
2 Tbsp Garlic
2 Tsp Sesame Oil
2 Tbsp Rice Vinegar

Mix all ingredients together.

Candied Cured Pork Bellies Winter Salad

1 5lb Bellies
1 Cup Salt
1 Cup Maple Syrup
1 Cup Brown Sugar
1 Tsp Thyme
1 Tsp Black Pepper
1 Tsp Celery Seed
1/4 Cup Garlic

Rub Mix into bellies for 4 days
Smoke at 225 degrees for 4 hours then slice & render bellies
Then Add Frisee salad, Honey Crisp apples, Caramelized Walnuts, Gouda Cheese, & Apple Cider Dressing

Apple Cider Dressing:

1 Cup Sugar
1 Cup Apple Cider Vinegar
1/2 Cup Lemon Juice
1 Tsp Salt
3 Cups Canola Oil

Mix ingredients except Canola Oil, then incorporate slowly
