Vegetarian Weeknight Meals
Pasta salad doesn’t need meat to make it outstanding. Alice takes a traditional Caprese salad and gives it a twist by making it into a pasta salad.
This Caprese pasta salad recipe is an easy make-ahead dish for weeknight dinner or potlucks. Made with fresh basil, mozzarella, tomatoes, and balsamic glaze.
Beetballs (Mushroom and Beet Black Bean Meatballs)
Alice’s takes her recipe for mushroom and beet black bean burgers and makes them into bite-size “beetballs” perfect for dinner bowls, tucked into pita, or alone and dipped into your favorite sauce. This beetball recipe is made with sauteed Portabella mushrooms, beets, black beans, and cilantro. These smoky veggie beetballs with a bit of sweetness will make both vegetarians and meat-eaters happy!
