Homemade Filet Mignon

Whole Roasted Filet Mignon


3 tablespoons unsalted butter
2 tablespoons olive oil
One whole 3 pound beef tenderloin
Kosher salt and freshly ground pepper
1 bunch watercress, washed

Preheat oven to 475°F

Heat the butter and the olive oil in a large skillet over medium-high heat.

Add the beef tenderloin and brown on all sides. Season with salt and pepper and place browned tenderloin in preheated oven. Roast until an instant-read thermometer inserted in the middle of the tenderloin reads 125-130°F (for medium-rare) or 135-140°F (for medium). Remove from oven and allow to rest on a cutting board before slicing and serving.
