Grilled Flatbread Pizza

Owner of Coalition Restaurant and Red Sauce Rebellion, Eli Wollenzien, stopped by with some tasty grilled flatbread pizza recipes.

Tomato & Avocado Flatbread

1 each Flatbread Crust (store bought)
1 tsp Olive Oil
2 tbsp Basil Pesto
3 oz  Fresh Mozzarella (diced)
8-10 each  Oil Packed Roasted Tomatoes (store bought)
¼ oz  Arugula
½ tsp Balsamic Vinegar
½ whole Avocado (diced)
As Desired  Salt & Pepper

Steps:

  1. To grill the flatbreads you will need to create an area of indirect heat on your grill. Heat half the grill to a hot temperature (450 degrees or more), and leave the remaining area without any direct heat.
  2. Rub one side of crust with olive oil. Place flatbread, olive oil side down, on hot area of grill.  Grill until crust is slightly charred.  Remove.
  3. Allow to cool slightly, then spread pesto over grilled side.
  4. Place mozzarella and roasted tomatoes evenly over crust.
  5. Return crust to grill, first over the high heat area to create char marks, then move to the lower temperature area to finish.
  6. Close grill and cook for a few minutes until cheese is melted and tomatoes are warm.
  7. Meanwhile, toss arugula, avocado, olive oil, and vinegar together.  Season with salt and pepper.
  8. Remove flatbread from grill, cut into squares, and top with avocado and arugula mix.

 

Cucumber & Grape Flatbread

1  each  Flatbread Crust (store bought)
1  tsp Olive Oil
3 tbsp Hummus (store bought)
½ cup Cucumbers (peeled, de-seeded, diced)
½ cup Red Grapes (halved)
1  tbsp Mint (chiffonade)
1 tbsp  Parsley (chopped)
1  tsp Olive Oil
1  pinch Salt & Pepper
1  tsp Hazelnuts (chopped)
Drizzle Local Honey

Steps:

  1. Rub one side of crust with olive oil. Place flatbread, olive oil side down, on hot area of grill.  Grill until crust is slightly charred.  Flip, and repeat on the opposite side.  Remove.
  2. Spread Hummus on top of flatbread.
  3. Toss together cucumber, grapes, mint, parsley, olive oil, and salt & pepper.
  4. Spread mixture over top of hummus.

Drizzle top of flatbread with honey.  Top with hazelnuts.
