12 Days of Cookies 2017: Pumpkin Pie Cookies

In this installment of 12 Days of Cookies on Twin Cities Live, Elizabeth goes behind the counter of the adorable T-Rex Cookie & Café in Minneapolis with owner Tina Rexing to do something we’ve never done before: throw a pie into a mixer of cookie dough. Elizabeth learns how to make Pumpkin Pie cookies that are packed with an actual pumpkin pie along with plenty of Land O Lakes® Salted Butter!

Pumpkin Pie Cookies
From Tina Rexing of T-Rex Cookie & Café

Preheat oven to 350 degrees.

1 Cup Brown Sugar
2 Cups White Sugar
1 1/2 Cup (3 sticks) Land O Lakes® Salted Butter, melted
3 Eggs
*Beat until fluffy*
5 Cups All-Purpose Flour
1 tsp Baking Soda
Add dry ingredients to butter & egg mixture
Add 9 inch pre-baked pumpkin pie (any other fruit pie can be substituted) to the dough and mix for 1 minute. If dough feels too moist to make into dough balls, add a little flour until dough is scoopable.

Scoop into evenly sized balls, flatten the tops. Sprinkle with a little brown sugar and cinnamon. Bake at 350 degrees for 8-10 minutes. Allow to rest 5 minutes on baking sheet before moving to cooling racks.
