Homemade Vegetable Sushi

Certified Holistic Health Coach and Wellness Expert Nicole Nelson stopped by the studio with a fun date night idea – homemade sushi.

Here’s the recipe:

  • Nori Wraps
  • White Rice
  • Shredded Carrots
  • Purple Cabbage
  • Bell Peppers
  • Avocados
  • Sushi Ginger
  • Soy Sauce or Coconut Aminos


Scoop about 1/4 cup of rice into nori sheet. Flatten with the back of a spoon and pack down firmly. Fill with veggie toppings. Take your fingers and wet the edge of the nori wrap (this will help it stick), then slowly roll the nori wrap making sure to keep it packed tightly. Take a sharp knife and slice into sushi rolls. Dip in coconut aminos.
