Orange Molasses Cookies with Cardamom Icing

1 cup Land O Lakes® Salted Butter (lightly softened)
¾ cup Light Brown Sugar
¾ cup White Sugar
2 tsp Vanilla Extract
3 TB Molasses (full flavor)
Zest from 1 large Orange (about 2 TB of zest)
3 cups All-Purpose Flour
½ tsp Baking Soda
2.5 tsp Pumpkin Pie Spice
¼ tsp Cardamom
1 cup Powdered Sugar
¼ tsp Cardamom
1 tsp Orange Extract
2 TB Milk
2 TB Land O Lakes® Salted Butter (melted)
Preheat oven to 375.
Combine butter and sugars in a stand mixer and mix until creamy. Add vanilla extract and molasses. Once combined, add egg, and then zest.
In a medium bowl, combine flour, baking soda, pumpkin pie spice, and cardamom. Slowly mix in dry ingredients into the mixer.
Use a cookie scoop and place cookie dough on cookie sheet and press down with a small jar or glass.
Bake for eight minutes.
Makes 32 cookies
Allow cookies to cool before icing.
For icing, combine powdered sugar, cardamom, orange extract, milk and melted butter. Spoon one teaspoon of icing onto each cookie. Allow icing to harden and serve.
