Taste the Trend: Kentucky Butter Cake

Eleven million people have viewed this viral recipe video. With that many people taking a peek, you’d think it’s probably a good recipe, right? When recipe developer, Mary Jane Miller took a look, she thought she could do better! She rated the original recipe only 3 out of 5 wooden spoons. She made a few changes and came up with her own recipe that is so much better!

Mary Jane’s Butter Rum Cake

1 cup butter, softened
2-1/2 cups sugar
4 large eggs
1 cup buttermilk
1 teaspoon vanilla extract
1/2 tsp. rum extract
3 cups all-purpose flour
1 tsp. nutmeg
1 tsp. salt
1/4 tsp. baking soda


1/2 cup butter
1/4 cup water
1 cup sugar
1/2 cup rum

  1. Heat oven to 325 degrees F. Thoroughly grease and flour a 10-inch fluted tube pan. In a large bowl, cream butter and sugar with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla and rum extract. Beat in buttermilk. Add flour, nutmeg, salt and baking soda. Mix in slowly, then increase speed and beat on high about 1 minute, scraping down bowl occasionally.
  2. Bake for 1 hour 20 minutes or a toothpick inserted in the center comes out clean. Cool in pan for 10 minutes.
  3. Meanwhile, melt butter in a saucepan. Stir in water and sugar. Boil 5 minutes, stirring occasionally. Remove from heat and stir in rum. Note: The rum will sputter and steam. Be careful not to burn yourself.
  4. Invert cake onto serving plate. Prick top with a fork. Brush glaze over warm cake repeatedly until all of the glaze has been absorbed. Serve with whipped cream.
