Pork farmer, Mike Patterson representing the Minnesota Pork Board, preps a tasty breakfast using homemade chorizo that’s a great fit for dinner too!
Breakfast Burritos with Homemade Ground Pork Chorizo
½ medium onion, diced
½ green pepper after removing seeds and rib, diced
½ lb Homemade Chorizo*
½ cup sour cream
Salt and pepper to taste
Cheese of your choice
Brown onion, pepper and 1/2 lb Homemade Chorizo
Drain on paper towels.
Scramble 8 eggs with 1/2 Cup sour cream, salt and black pepper to taste.
Add drained Chroizo, onion and green pepper back to the pan.
Top with your favorite cheese, cover and allow cheese to melt.
Serve wrapped in warm tortillas with your favorite salsa.
1 lb Ground Pork
1 Tsp Salt
1 Tblsp Red Wine Vinegar
1 Tsp Minced Garlic
1 1/4 Tsp Chili Powder
3/4 Tsp Hot Paprika
3/4 Tsp Chipotle Powder or Smoked Paprika
3/4 Tsp Dried Oregano
1/4 Tsp Ground Black Pepper
1/8 Tsp Ground Cumin
