Pork Kabobs

Chef Tim McCarty kicks off Pork Week with Pork Kabobs with a Grilled Pineapple Salsa on Spice Zucchini Noodles. For more from the Minnesota Pork Board, click here.

Pork tenderloin         lg diced 1oz pieces   6 pc
Red onion                   lg diced 1” squares   1pc
Red peppers               lg diced 1” squares   1pc
Yellow peppers          lg diced 1” squares   1pc
Poblano pepper         lg diced 1” squares    1pc
Grape tomato                                                  1pc
Your favorite BBQ  seasoning

On 12” bamboo sticks season pork, start with 1 pc pork then 1pc red onion, pork, red pepper, pork, yellow pepper, pork, poblano, pork, grape tomato and pork. Spray with a bit of oil and place on a hot grill, pull when pork is 140

 

Zucchini Noodles

Zucchini  4oz for order      spin on a spiralizer into long noodles
Extra virgin olive oil             ½ TBSP
Garlic   minced                       ½  tsp
Red pepper flakes                1 small pinch
Salt and pepper                     tt

In a sauté pan med-high heat add oil, zucchini sauté for a few min, add garlic, pepper flakes, sauté 1 more min remove from heat salt and pepper to taste.

Plating zucchini on plate, place pork and top with pineapple salsa

 

Pineapple Salsa

1 Pineapple, small dice
1 Red Pepper, small dice
½ Red onion, small dice
1 Bunch Cilantro, chopped
1 Jalapeno, small dice
2 TB Salt
2 TB Lime juice
1 Tb Sugar

Mix together and serve.
