Laurie Crowell of Golden Fig stopped by with some healthy homemade snacks recipes that are good for when you’re on the go.
Cherry Almond Granola Bars
2 1/4 C quick cooking oats
1 1/2 C crisped rice cereal
2 TB ground flax
2 TB cocoa powder
1/2 C dried cherries
1/2 C slivered almonds
2 pinches kosher salt
6 TB coconut oil
1/2 C honey (or maple if you want)
1/2 C. Almond butter
1 TB Vanilla Bean Paste
-Place parchment into pan, leaving extra on for easy removal.
-In large bowl stir together oats, rice cereal, flax, cocoa powder, cherries, almonds and salt. Set aside In small saucepan warm up coconut oil, honey, almond butter and vanilla bran paste. Stir until melted and well combined.
-Pour melted ingredients into dry ingredients. Mix well.
-Pour into pan, place additional piece of parchment on top and press firmly. Let sit in fridge for 2 hours before cutting to serve.
Pomegranate Lemon Chia Pudding
1/3 c chia seed
3/4 C plain greek yogurt
1 cup rice, coconut, or almond milk
1 TB honey (or to taste)
1 tsp vanilla bean paste
Zest of 1 lemon
1/2 C fresh pomegranate arils
– Whisk all ingredients except pomegranate arils. Pour into 2-1 C containers. Let sit overnight. Before serving, top with pomegranate arils.
-Pomegranate arils are high in vitamin c and potassium. They are high in antioxidants, high in iron and just plain delish.
Laurie’s Trail Mix
1/2 C each Almonds, pecans, filberts, banana chips, chocolate covered ginger, pumpkin seeds
1 C. Dried cherries
Mix all items together. Portion into little single serve containers for easy portability as well as easy portion control.
