Valentines Day Cakes

Baking instructor, Nancy Burgeson, shows us how easy it is to make individual cakes that your valentine is sure to love.
MINI CAKES-using cake mixes and fun flavored liqueurs!

To mix the batter do not follow mixing directions on package.

1 cup liquor/liqueur-find a fun match-up to the cake flavor you are making i.e. lemon cake with lemon drop liqueur or chocolate cake with Irish cream liqueur.
3 large eggs
1/4 cup vegetable oil
1/3 cup sour cream
1 package cake mix any flavor

In large bowl of mixer beat together liquor/liqueur, eggs, oil and sour cream until well mixed. Add cake mix and blend well.
Prepare a 11X17 inch cookie pan (with edges) by spraying with baking spray and lining with parchment paper. Lightly spray parchment paper too.

Pour batter into prepared pan and level out batter using a long blade spatula. Bake in a preheated 325 degree oven until tested done.

Cool completely in pan. Cover cooled cake and refrigerate overnight.

Using a round cookie cutter or biscuit cutter, cut small circles of cake. (cakes should still be cold while cutting) Cover cakes with Nancy’s Buttercream frosting recipe. Frosting can be tinted with food coloring to match the color of the cake. Also, replacing some of the cream or milk with liqueur adds wonderful flavor!
