Frittata

Paul Folger, 5 Eyewitness News anchor, makes a Frittata meal for a quick and easy Monday Night Meal.

 

1 glass pie dish
Cooking Spray
1 red pepper
1 orange pepper
1/2 cup grated Parmesan cheese
1/4 cup chopped kale
1/4 cup fresh green onions
6 eggs
1/2 cup fried pork or turkey sausage

Spray pie pan with cooking spray
Heat oven to 400 degrees
Slice and Sauté peppers til soft add kale for 2 minutes.
Fry up sausage
In a separate bow break 6 eggs then whisk til beaten.
Add in veggies
Add in Parmesan cheese
Add in sausage
Salt and pepper to taste
Mix together then pour in baking dish.

Bake 15 to 20 minutes til eggs set up.Take out add dress chopped green onions.  Slice and serve. Can be served room temp too.

I serve with mixed greens and dressing of your choice.
