Rob’s Chicken Chalupa

There was a lot of hype when a popular fast food chain ditched the traditional tortilla shell for a fried chicken shell. We tried the “Naked Chicken Chalupa from Taco Bell on the show… and it wasn’t too bad. But it’s no longer on the Taco Bell menu. It turns out you can create your own at home that’s arguably even healthier than the original. Cooking For Dads, Rob Barrett explains how.

Rob’s Chicken Chalupa


1 chicken paper (see below)
handful chopped tomatoes
handful shredded lettuce
handful shredded cheese (cheddar or other favorite)
ranch dressing
Pico de Gallo
Olive oil
Salt and pepper


In a large frying pan, heat a spoonful of oil over medium heat until hot.

Spread oil in a thin layer around pan.

Place chicken paper on pan for 30 seconds.

Flip over, season with salt and pepper, place a thin layer of shredded cheese.

Allow cheese to melt. Once melted add tomatoes,

lettuce and sprinkle with ranch dressing, Pico and a spritz of lime.

Fold over in half and remove from pan and serve hot.
