Pork Gyros

Dr. Cara Haden, a veterinarian for a farm in Pipestone, Minnesota kicks off Pork Week with a recipe for pork gyros.

Pork Gyros

1 lb. pork sausage
4 to 6 pita bread

Brown the pork sausage over med. high heat in a skillet, remove from heat. Make yogurt sauce using ingredients listed below.

To create the Gyro – lay the pita on a plate, on one half spread some of the cucumber yogurt sauce, top with browned pork sausage. Add toppings of your choice: red onions, tomatoes and/or feta cheese.

Cucumber Yogurt Sauce:

¾ cup Greek yogurt
1 Tbsp red wine vinegar
1 Tbsp dill – dried
6 garlic cloves – diced
1 cucumber, seeds removed – diced

Stir all the ingredients together to make the yogurt sauce

Toppings:

Sliced red onions
Diced tomatoes
Feta Cheese
