Hashi Burger

Jamal Hashi is instrumental for bringing the flavors of Somali cuisine to Minneapolis, and America in general.  He wanted to introduce American’s to camel meat and created the Hashi Burger.  It has since taken off in the middle east being served at Kuwait Fire House, Babel Food Chain in Dubai and Saudi Arabia, and Hashi Burger Restaurant in Qatar.  The Hashi Buger is available at Safari Restaurant in Minneapolis.

Hashi Burger

Source 2 pounds of lean camel meat trimmings (usually trimmings refer to the meet under the hump which is what I use)
Fine ground two to three times
Sea salt
Fresh ground black pepper

For the sauce:

4  Egg Yolk
3 Garlic cloves
½ cup olive oil
3 tablespoons and 2 1/2 teaspoons ketchup
1 teaspoon grey poupon
2 1/2 teaspoons sweet pickle relish
2 1/2 teaspoons dill pickle relish
1 teaspoon Worcestershire sauce
1 teaspoon white wine vinegar
1/2 teaspoon salt
1/2 teaspoon sugar
