Farmers Market Finds

Shopping the Farmer’s Markets is a favorite for 5 Eyewitness News’ anchor, Paul Folger.  He makes a meal from the fresh veggies he finds, just perfect for a Monday Night Meal.

Open Faced Heirloom Tomato Toast

  1. 2 large heirloom tomatoes
  2. 4 slices of toast
  3. Mayo
  4. Salt and Pepper

Get the most beautiful heirloom tomatoes you can find. Slice them. Toast the bread and apply a generous knife of mayo. Add salt and pepper.

 

Sweet Yellow Corn

  1. 4 ears of garden sweet corn.
  2. 3 cups of water
  3. Butter
  4. Salt and Pepper

Shuck the 4 ears of corn. Place in flat casserole dish and cover with water. Cook 6 minutes in Microwave. Then turn ears in water and cook another 3 minutes. Take out and cut it off the cob. Serve with simply butter, salt and pepper

 

Fried Zucchini

  1. 4 green zucchini
  2. 2 eggs
  3. ¼ cup flour
  4. ½ cup cornmeal
  5. Salt and pepper
  6. Oil Cover bottom of skillet
  7. 2 Tablespoons Mayo, 1 Tablespoon Hot Sauce or Sriracha

Slice the zucchini average thickness. You want to have a bite. Rest on paper towels to soak up natural moisture while prep the rest. Crack both eggs and beat with a fork in small bowl. Toss flour/cornmeal/salt and pepper to taste. Dip slices in eggs. Then dredge in flour/cornmeal mixture place in hot oil fry on both sides till browned.
