It’s peak peach season and grilling them might be something you haven’t thought of. Laurie Crowell from Golden Fig shares three grilled peach recipes.
Grilled Peach Salsa
2 peaches halved/pitted
3 limes halved
1/2 vidalia onion
1/2 C loosely packed cilantro leaves, chopped
1 TB fresh mint
splash of olive oil
Pinch of chili pepper
rub ends of cut limes on halved peaches and vidalia onion.
Preheat grill to medium.
Place peaches, limes and vidalia onion on grill and cook just until nice char marks are present.
Remove from heat, when cool enough to handle small dice peaches and onion and place in medium bowl.
zest lime halves into bowl, squeeze lime halves in to bowl, toss in cilantro, mint, olive oil and chili pepper.
Gently toss to coat.
Serve at room temp or chilled.
Delicious with corn chips, also amazing served with shrimp, chicken, salmon, tacos etc.
Grilled Peaches with Chevre
2 ripe peaches, halved and pitted
2 TB good quality olive oil
1/3 C chevre or feta if you prefer
1/4 C chopped pecans
handful fresh mint leaves, chopped
Toss peaches in olive oil
Over medium heat, place peaches, flat side down, on the grill.
Let grill about 4 minutes.
Crumble cheese over top
sprinkle pecans around, toss mint on and sprinkle with a little Chocolate Salt
Grilled Peach Daquiri
Put 4 glasses in the freezer to chill while making this treat!
4 Cups grilled peaches (about 4 peaches) diced
3 limes, juiced
2-3 C ice cubes
2 tsp simple syrup
Your favorite white rum ( I am currently loving the Norseman Rum but there are A LOT of Minnesota distillers doing right by rum, so seek out Skaalvenn or 11 Wells, Twin Spirits, Tattersall, Royal Foundry….)
Place all ingredients in the blender and buzz it up until smooth. Add a little water if a little more moisture is needed..
Also, feel free to adjust the sweetness. I like more tart than sweet, but more simple syrup is also tasty.
