Green Eggs and Ham with a Twist

Chances are you may have a lot of leftover ham after Easter but Private Chef Justin Davis has a fun way to make Green Eggs and Ham with a twist.

Ingredients for the Green Sauce

1 tomatillo
2 garlic cloves
1 teaspoon ground cumin
Louisiana hot sauce (to taste)
Small handful spinach
Small handful basil
Small handful cilantro
Salt and pepper

Other Ingredients:

1. Place the ingredients for the green sauce into a blender and blend until smooth and set aside
2. To make soft boiled eggs, Bring a pot of water to a boil, gently place eggs into the boiling water for about 6 minutes and directly into cold water until cool enough to handle
3. Heat up a small sauté pan and lightly fry the ham in a bit of oil
4. Lay the ham slices onto a plate and place your eggs on top
5. Spoon green sauce onto the eggs, to-taste and enjoy
