Rob’s Un-Fried, Fried Rice

Cooking for Dads host, Rob Barrett shows us his recipe for unfried fried rice.

Ingredients:

I cup uncooked Jasmine rice
1 cup water
2 spoonfuls coconut oil
1 egg beaten
1 handful pea pods chopped
1 handful chopped red pepper or vegetable of choice
1 handful rotisserie chicken chopped.
2 spoonfuls soy sauce
1 spoonful sugar
1 spoonful sriracha (optional)
1 spoonful chopped garlic

Directions:

Add water and uncooked rice to small pot with tight fitting lid.

Bring water to boil. Cover with lid and lower heat to low.

Let it simmer for 20 minutes.

Remove lid and add 2 spoonfuls coconut oil. Stir.

Pour egg on top and don’t stir. Cover and let the egg cook completely, about 2 minutes.

Add pea pods, red pepper, chicken, soy sauce, sugar, sriracha and garlic and stir

until combined.

Cover and let it sit for 3 minutes.

Serve and enjoy.
