Rob’s Easy Croissants

Cooking for Dads host, Rob Barrett created a new technique for making croissants – a 100 layers in under 3 hours.

Ingredients:

777 grams of bread flour
3 spoonfuls active dry yeast
2 spoonfuls salt
4 spoonfuls sugar
2 spoonfuls olive oil
3 sticks of non-salted butter
377 grams of warm water

For Finishing:

1 egg beaten
garlic salt
grated Parmesan cheese.

Directions:

Place dinner plate in refrigerator.

Place flour, yeast, salt, sugar, and olive oil into mixing bowl.

Cut 1 stick of butter into small cubes and toss with flour mixture.

Combine until everything is incorporated. Knead for 7 minutes.

Divide in half and roll out half the dough into large rectangle about 1/8” inch thick.

Spread bottom half with butter. Fold over dough in half.

Spread middle third with butter. Fold over one third of dough over butter.

cover that layer with butter, fold over other third.

Cover half of remaining dough with butter and fold in half.

Wrap in plastic wrap and place in freezer for minutes and then on the plate in the refrigerator for 15 minutes.

Repeat for other half of dough.

Remove dough from refrigerator, and repeat rolling out, folding and buttering process.

Place back in freezer for 5 minutes and then on the plate in the refrigerator for 30 minutes.

Remove and roll out into large rectangle again

 

For Croissants:

Cut dough into long and thin triangles.

(optional, sprinkle with garlic salt and parmesan cheese)

Roll up starting on wide end. Place on baking sheet.

Cover and let rise for 30 minutes.

Brush with beaten egg.

Bake at 400 degrees for 15 minutes or until golden brown.

 

For Croissant bread:

Sprinkle with garlic salt and parmesan cheese – optional

Roll up rectangle into long tube.

Place seam down on baking sheet and seal up ends by squeezing together.

Cover and let rise for 30 minutes.

Slice holes into the dough on the diagonal.

Brush with beaten egg.

Bake at 350 degrees for 20 minutes or until internal temp is 189 degrees.

 

For Croissant wheels:

Sprinkle with garlic salt and parmesan cheese – optional

Roll up rectangle into long tube.

Cut into small wheels and place on baking sheet.

Cover and let rise for 30 minutes.

Brush with beaten egg.

Bake at 400 degrees for 15 minutes or until golden brown.
