Monday Night Meal: Stone Fruit & Shrimp 

Laurie Crowell, the owner of Golden Fig Fine Foods, prepares a light and easy meal perfect for a Monday Night Meal.

1 lb shrimp
1 TB olive oil
Juice of 1 lime (save lime for zesting on fruit)
Salt and pepper to taste
Skewers

Do a quick 5 minute marinade with the shrimp, olive oil, salt and pepper. Skewer shrimp and grill over medium heat about 2.5 minutes per side. Remove from grill and cover with foil.

 

2 lbs assorted stone fruits. Right now peaches, apricot and plums are in season.
A few mint and basil leaves, torn into small pieces
Zest of 1 lime
1/3 C Feta cheese

Cut stone fruits into large dice. Toss with fresh herbs. Crumble feta in, zest lime over top and serve.
