Pork Week: PB&J Stuffed Pork Burger

PB&J Stuffed Pork Burger with Brie on Toasted Brioche Buns topped with Pickled Jalapeno and Red Onion  

  • Ground Pork – 80/20 1 ½ lb
  • Brie cheese – 12 oz
  • Toasted brioche Bun – 6 each
  • Pecan Butter – 2 cups
  • Bacon Jelly – 2 cups
  • Pickled Jalapeno – 1 cup
  • Pickled Red Onion – 1 cup

Stuffed Pork Burger:

  • Ground Pork  – 12- 2oz balls
  • Brie cheese – 6- 2oz wedge
  • Bacon Jelly – 1oz
  • Cracked Black Pepper

Use 2 small plates and flatten pork into patty, place 1 piece of brie and 1 oz of bacon jelly in the middle and place the other patty on the top press the edges to seal. Cracked pepper on top, Place on a hot grill 2 to 3 min or until 160 internal temp is reached. each side getting nice grill marks. Toast buns on the grill

Maple Pecan Butter:

  • Toasted Pecans – 12oz
  • Bacon Fat – 2TBSP
  • Maple Syrup – 3TBSP
  • Sea Salt – ¼ tsp

Place Pecans on sheet pan place in 350 degree oven 7 to 10 min pull out and cool. Place in a food processor and rest of ingredients and blend until smooth like peanut butter.

Bacon Jelly :

  • Bacon diced – 1lb
  • Yellow Onion diced – 1 cup
  • Bourbon – 1TBSP
  • Brown Sugar – 1TBSP
  • Garlic – 2 cloves
  • Current Jelly – 2TBSP
  • Balsamic vinegar – 2TBSP

Place bacon in sauté med-high heat render some of the fat out and save, add onions cook until light brown, add bourbon cook until reduced, add garlic, jelly, balsamic vinegar. Reduce heat and simmer until it looks thick.

Pickled Red Onions:

Red Onion (Julienne) – 1 Lg.

Red wine vinegar – ¾ cup

Sugar – ¾ cup

Julienne onion, bring vinegar and sugar to a boil in a pot, remove from heat add onions to the mix, let cool, they are ready.

Pickled Jalapeno pepper:

  • Jalapeno sliced – 8 each
  • White Balsamic  vinegar – ½ cup
  • Sugar – ½ cup
  • Cracked Blacked Pepper – 1 tsp

Slice Jalapeno , bring vinegar and sugar to a boil in a pot, remove from heat add peppers to the mix and let cool.
