Monday Night Meal: Chicken Shawarma & Crispy Rice Bowls

If you’re getting sick of comfort food but not quite ready for summer salad season, here’s a simple but impressive meal perfect for a quick Monday Night Meal.

STEP ONE – CREATE THE MARINADE

Chicken Shawarma Marinade

1 Tbsp Cumin
1 Tbsp Turmeric
1 Tbsp Smoked Paprika
1 Tbsp Salt
1 Tbsp Curry Powder
1 Tbsp Garlic Powder
1/2 Tbsp Cinnamon
1/2 Tbsp Cayenne
3 Tbsp Olive Oil
Juice of 1 lemon

*Marinate for up to 24 hours*
You can double or triple the marinate if you make more chicken

STEP TWO – GRILL CHICKEN 3-5 MINUTES EACH SIDE
*Then let rest 5 minutes and slice*

STEP THREE – MAKE GARLIC YOGURT SAUCE

Garlic Yogurt Sauce

1 Cup Plain Greek Yogurt
Zest from one 1 lemon
Juice from half a lemon
1 Clove of garlic finely minced
Fresh or dried dill

STEP FOUR – CRISP RICE
Toss cooked jasimine rice with olive oil – I like the Lemon EVOO from Olive Grove
Cook in air fryer for 10 minutes until crisp (you can also pan fry the rice)
Toss with fresh herbs – try basil or even mint!

STEP FIVE – ASSEMBLE BOWLS
Add mix greens, cherry tomatoes, cucumbers and pickled red onions
Top with crispy rice, chicken and garlic sauce
