Cookbook author and blogger, Sara Keiffer stopped by to make a delicious doctored up pasta sauce and spaghetti for this week’s Monday Night Meal.

Doctored Up Pasta Sauce and Spaghetti
1 tablespoon bacon fat or olive oil
1 pound ground beef
1 tablespoon olive oil
3 garlic cloves, minced
Pinch red pepper flakes
½ teaspoon salt
One 24 ounce can tomato pasta sauce
1/3 cup white wine or vermouth
¼ cup Parmesan cheese, grated
1/3-2/3 cup heavy cream
Salt, pepper, sugar to taste
1 pound pasta, cooked (penne, rombi, or spaghetti)
In a large skillet, heat the bacon fat over medium heat. Add the ground beef and cook until the outside is brown and the middle is no longer pink. Turn off the heat, remove the hamburger from the pan and set aside. With a paper towel, wipe out any hamburger grease from the pan.
Put the olive oil, garlic, pepper flakes, and salt in the pan and heat over medium-low until the garlic is fragrant, about 45
seconds. Add the tomato sauce and white wine, and stir to combine. Heat over medium-low for 10 minutes, stirring occasionally. Add the Parmesan cheese and stir to combine. Add 1/3 cup heavy cream. Taste the sauce; if the tomatoes are very acidic and more sweetness is needed, add 1 teaspoon of sugar, and more heavy cream. Add salt and pepper to taste. Add the cooked pasta to the sauce, and gently stir to combine. Serve with more grated parmesan.
