Pumpkin Lasagna

Best week ever continues with Chef Mary Jane Miller! Over the years, Twin Cities Live has prepared a lot of yummy food on the show. Elizabeth loved her Pumpkin Lasagna recipe, which is simple to make!

Ready in 1 hour 20 minutes
Makes 6 servings

1 Tbsp. butter
1/2 cup chopped onion
1 clove garlic, pressed or minced
5 oz, baby spinach, rinsed
3/4 tsp. salt, divided
1/2 tsp. pepper, divided
1 tsp. dried whole sage leaves, crumbled
1/8 tsp. ground nutmeg
1 (15 oz. can) pumpkin
1 cup heavy cream
3/4 cup parmesan cheese
1 (25 oz.) pkg. frozen cheese stuffed ravioli

  1. Heat oven to 350 degrees F. In a large skillet, melt butter. Cook onion in butter until tender, about 5 minutes. Add garlic and spinach. Continue cooking, stirring often, for 2 to 3 minutes or until spinach is just wilted. Season with 1/2 tsp. salt, 1/4 tsp. pepper, sage, and nutmeg.
  2. Meanwhile, in a large bowl, whisk together pumpkin, cream, 1/2 cup Parmesan cheese, and remaining 1/4 tsp. salt, and 1/4 tsp. pepper.
  3. In a buttered 8 cup baking dish, spoon a little of the pumpkin sauce and spread to coat the bottom. Layer one third of the ravioli (about 16) in the bottom of the dish. Top with a third of the pumpkin mixture and half of the spinach mixture. Top with half of the remaining ravioli, half of the remaining pumpkin sauce, and the rest of the spinach. Top with remaining ravioli and spread sauce over all. Sprinkle remaining cheese over all.
  4. Cover tightly with foil and bake 30 minutes. Uncover and bake 30 minutes longer or until bubbly and brown.

Dame It! Event

Some of the Twin Cities’ most creative kitchens are led by women chefs. They delight us with their skills, but also inspire young women pursuing culinary careers.

This Sunday, the Minnesota chapter of Les Dames d ‘Escoffier, a group of women in food, beverage and hospitality, is hosting “Dame it!” A party from 2-5 p.m. Sunday, April 30th to celebrate women chefs & restaurateurs while raising funds for two worthy causes: Culinary students and the youth gardening project, Urban Roots. In addition to fabulous food, wine and cocktails, there will be a silent auction.

The event is open to everyone. Tickets can be purchased in advance online www.dameit.info or on Eventbrite.com. People can also learn more about the event and the chefs involved on the Dame It! Facebook page.

Tickets are $85, of which $45 is a direct donation to the charities.
