TCL Home Cook, Linda McConnell, stopped by the TCL kitchen to share a couple of easy and refreshing appetizers for summer gathering.
Summer Cucumber Soup
1/4 cup packed parsley
3 cloves garlic
1 1/2 teaspoon Italian spice
1 med seedless cucumber chopped
1 med green pepper, seeded and chopped
1 small white onion quartered or chopped
2 green onions chopped
2 cups low fat plan yogurt
3 cups chicken or veggie broth
2 tablespoons lemon juice
Hot pepper sauce
Directions
- In food processor or blender, finely chop parsley, garlic, Italian spice. Add cucumber, green pepper, and onions; process until coarsely chopped.
- Blend in yogurt, broth, and lemon juice until well mixed. Season with your hot sauce
- Cover and chill for at lease one hour.
Prosciutto Wraps
Cut melon: Cantaloupe or Honeydew into what ever size wedge you would like. wrap with prosciutto and drizzle with chili infused honey.
Chili infused Honey: 1/4 cup honey and 1/4 teaspoon chili powder mixed.
Pair with Cucumber water – Slice cucumber put in glass with a few mint leaves and add water and ice. water can be tap or sparkling.
