Easy Summer Appetizers

TCL Home Cook, Linda McConnell, stopped by the TCL kitchen to share a couple of easy and refreshing appetizers for summer gathering.

Summer Cucumber Soup

1/4 cup packed parsley
3 cloves garlic
1 1/2 teaspoon Italian spice
1 med seedless cucumber chopped
1 med green pepper, seeded and chopped
1 small white onion quartered or chopped
2 green onions chopped
2 cups low fat plan yogurt
3 cups chicken or veggie broth
2 tablespoons lemon juice
Hot pepper sauce


  1. In food processor or blender, finely chop parsley, garlic, Italian spice. Add cucumber, green pepper, and onions; process until coarsely chopped.
  2. Blend in yogurt, broth, and lemon juice until well mixed. Season with your hot sauce
  3. Cover and chill for at lease one hour.

Prosciutto Wraps

Cut melon: Cantaloupe or Honeydew into what ever size wedge you would like. wrap with prosciutto and drizzle with chili infused honey.

Chili infused Honey: 1/4 cup honey and 1/4 teaspoon chili powder mixed.

Pair with Cucumber water – Slice cucumber put in glass with a few mint leaves and add water and ice. water can be tap or sparkling.
