Pork chop, boneless
Jalapeno pepper chopped
Salt and pepper
Preheat oven or grill to 375 degrees.
Place pork chop in between 2 sheets of plastic wrap. With a meat hammer or rubber mallet pound the pork until it is tripled in size and around 1/4” thick. Take your time and work slowly.
Remove top plastic wrap and sprinkle with salt and pepper.
Apply a thin layer of BBQ sauce all over the pork.
Sprinkle with taco seasoning.
Place chopped jalapeno and pineapple strategically over the pork.
Roll up pork and hold in place with a toothpick.
Bake or grill for around 20 minutes or until internal temp is 145 degrees.
Remove from oven and slice thinly. Sprinkle with lime juice and chopped cilantro.
Eat with rice or in a warmed up taco shell.
