Lindsay Guentzel, food writer for Bring Me the News, shows us a recipe for an easy French toast bake. The recipe is written to be gluten-free but can easily be made with whatever bread you have on hand. - 3 medium Pink Lady apples
- 1 tbsp granulated sugar
- 1 tbsp light brown sugar, packed
- 1 medium lemon, juiced and zested
- 1 tsp ground cinnamon
- 6 eggs
- 1/2 cup milk
- 1/2 cup half & half
- 1/4 cup granulated sugar
- 1/4 cup light brown sugar, packed
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- 1 loaf gluten-free bread
- 1 tbsp melted unsalted butter
- 1 tbsp brown sugar
- 1 1/2 cup old-fashioned oats
- 1 cup light brown sugar
- 3/4 cup cold unsalted butter, diced
- 1/2 tsp ground cinnamon
- Pinch of salt
- Caramel Sauce
- Maple Syrup
- Whipped Cream
Preheat oven to 350°.
Prepare 13 by 9 baking dish by greasing bottom and sides with 1 tbsp butter.
Peel, core and dice apples. Place in medium mixing bowl. Add 1 tbsp sugar, 1 tbsp brown sugar, lemon juice, zest and 1 tsp cinnamon. Mix well to coat apples. Set aside.
In medium mixing bowl, whisk eggs, milk, half & half, 1/4 cup sugar, 1/4 cup brown sugar, vanilla extract and 1 tsp cinnamon. Mix well.
Slice loaf of bread into four even sections. Dip bread pieces into the egg & milk mixture and lay out one layer in the bottom of the prepared pan. Sprinkle 1 tablespoon of brown sugar over the top.
Spread half of the diced apples over the first layer of bread pieces.
Dip remaining pieces of bread into egg & milk mixture and place evenly over the top of the first two layers of bread and apples. For a softer French Toast, pour the remaining egg & milk mixture evenly over the top of the bake. For a crispier French Toast bake, discard the remaining egg & milk mixture.
Cover French Toast with remaining apple mixture.
In one of the empty mixing bowls, mix 1 1/2 cup brown sugar with oats and 1/2 tsp ground cinnamon. Using a pastry cutter or two forks, mash cold butter into the oats mixtures. Continue mashing until crumbles form.
Spread oatmeal crumble over the top of French Toast bake.
Bake uncovered for 50 minutes.
Allow French Toast to cool and settle slightly before serving.
Serve warm with caramel sauce, maple syrup and/or whipped cream.
