Owner of Golden Fig, Laurie Crowell stopped by to share a unique twist on the Sloppy Joe.
2 slices thick cut bacon, chopped
1 TB butter
1 small onion, small dice
1 small bell pepper, small dice
2 celery stalks, small dice
1 carrot, small dice
2 garlic cloves, minced
1 lb ground beef
2 TB tomato paste
2 tsp Golden Fig Chili Powder
1 tsp cumin
1/2 tsp smoked paprika
1 tsp kosher salt
1/2 tsp black pepper
1/2 tsp Tin Mustard dried mustard
1 TB brown sugar
12 oz tomato puree
2 TB Colonel Pabst Worcestershire
2 TB Carr’s cider vinegar
1/2 c water
How to Make it:
Sauté bacon over medium heat for 3 or 4 minutes.
Add butter, onion, celery, bell pepper and carrot. Cook for 5 or 6 minutes.
Add garlic and 2 TB tomato paste, cook 2 minutes.
Add ground beef and break up into smaller pieces cook until red color is gone.
Sprinkle chili powder, cumin, smoked paprika, salt, pepper, dried mustard and brown sugar, cook a minute or so, tossing beef so it is coated with spices.
Add tomato sauce, Worcestershire and cider vinegar and water.
Simmer on low 30 minutes or until thickened.
Serve on bun with cheese.
Sweet Corn Salad
4 ears sweet corn- cut from cob
1 red bell pepper
1 English Cucumber
1 pint of cherry tomatoes halved
1 Cipollini onion- sliced
How to make it:
Mix all veggies together
Toss with vinaigrette
Crumble cheese on top
