Cheese Curds Recipe
2 quarts vegetable or corn oil for frying
1/8 C milk
1/2 C + 1 TB all purpose flour
1/3 C beer
1/4 tsp kosher salt
1 lb cheesecurds
Stainless steel 4 qt stock pot
Heat oil to 365 degrees
While oil is heating, whisk together milk, flour, beer, egg and salt.
Dip curds in batter and gently (and carefully) place into heated oil.
With fork, turn curds around facilitating even browning. Remove around the minute mark and place onto paper towels to absorb excess oil.
