The owner of Golden Fig Fine Foods, Laurie Crowell, stopped by to help us recreate State Fair foods at home.
BLHTFCCPM (bacon, lettuce, heirloom tomato, focaccia, corn, pesto mayo sandwich) Ingredients: 1 loaf focaccia bread 1 or 2 heirloom tomato, sliced into thick rounds 1 head butter lettuce 8 slices thick cut bacon Kosher salt and pepper Pesto Mayo 1/2 good quality mayo 1 TB basil pesto Squeeze of lemon juice Mix all ingredients together Corn Coulis 1 shallot, thinly sliced 1 TB olive oil 2 C fresh corn 1/2 C. Chicken stock (more or less, to get sauce to desired consistency) 1/2 tsp chipotle or ancho powder Kosher salt and pepper Directions: In skillet, heat oil. Saute shallot until translucent and almost caramelized. Add in sweet corn, chipotle or ancho powder, salt, pepper and chicken stock and simmer until raw flavor has left sweet corn. Cool, place in blender and buzz until blended, but still a little chunky. Add a little more stock if it is too thick. Cook bacon to desired crispness. Slice focaccia into squares or triangles (depending on which shape – rectangle or round – you have). Spread a little pesto mayo on bottom piece. Place lettuce leaf down, top with tomato slice and sprinkle a little salt and pepper on tomato, top with two pieces of bacon, a good spoon of corn coulis and top with top piece of focaccia. Griddled peaches with goat cheese and honey Ingredients: 4 peaches, halved and pitted 4 oz herbed chevre (goat cheese) 1 TB honey Directions: On a griddle or non stick pan, heat honey, place peaches, flat side down and cook until they start to slightly brown. Turn upright, place in serving bowl. Sprinkle chevre over top of hot peach. Let set 1 minutes for cheese to soften. Eat! Maple Brown Sugar Baked Bacon Ingredients: 12 oz. Thick cut bacon 5 TB brown sugar 2 TB + 1 tsp maple syrup Heavy pinch of coarse ground black pepper Preheat oven to 375 Line baking sheet with foil Directions: Spray rack with cooking spray and place on baking sheet. Place bacon in single layer on oiled baking rack. In a small saucepan, heat brown sugar, maple and black pepper until brown sugar dissolves. Working quickly, brush on bacon, flip bacon and brush on other side. Bake about 35 minutes until glazed and tasty! Poke a long wooden skewer in if you really want it to seem like the fair!
