Instant Apple Crisp with Vanilla Glaze

Chef and cookbook author, Robin Asbell steps in with a recipe that will satisfy your sweet tooth as we celebrate Apple Week!

Serves 4

2 tablespoons butter
1/4 cup maple syrup
4 large Zestar apple, cored; thinly sliced
1 teaspoon ground cinnamon
1 dash nutmeg
2 tablespoons apple brandy, optional
1 cup granola
2 tablespoons chopped walnuts
1/2 cup powdered sugar
1/2 teaspoon vanilla

1. Melt butter in a large cast iron skillet. Add maple and sliced apples and cook over medium-high heat, stirring frequently. Add brandy. Sprinkle over cinnamon and nutmeg. cook for about 5 minutes, until fruit has softened.
2. In a small cup, stir the powdered sugar, vanilla, and just enough milk to make it pourable.
3. Scrape the apple mixture into a pie plate or small casserole and sprinkle over the granola. Drizzle the powdered sugar glaze over the granola and serve immediately.

Apple Salsa

Makes about 2 cups

2 cups chopped apple
1 small jalapeno, seeded and diced
2 teaspoons sugar
2 tablespoons lime juice
1/4 cup fresh cilantro, chopped
1 large scallion, thinly sliced
plain tortilla chips

Dice the apple, unpeeled. Put in a bowl with the jalapenos, sugar, lime and cilantro and toss to mix. Serve with chips, nachos, quesadillas, or anything else that needs a little crunchy salsa.
