Monday Night Meal: Coffee Pot Roast

Five Eyewitness News anchor, Paul Folger, makes a meal you can throw in the slow cooker and when you come home, your whole house will smell like coffee.

3 lb. Pot Roast
1 TB Vegetable Oil
¼ Cup Soy Sauce
1 Cup Brewed Black Coffee
2 Bay Leaves Broken Up
1 Clove Garlic
½ teaspoon dried Oregano
2 Medium Onions Sliced

Directions:

Brown pot roast in oil

Add ingredients

Bake 3.5-4 hours at 350 degrees

Or overnight in crockpot on low or when you leave for work

 

Side of Carrots:

1 lb. bag of baby carrots prepped and peeled, steam them. In a pan melt 2 Tablespoon of butter and 2 Tablespoons of light brown sugar. Cook on low for 10-15 minutes.
