Beans of all kinds are nutricous, high in fiber, protein and other vitamins. Laurie Crowell, the owner of Golden Fig Fine Foods shows us how to turn them into tasty dip recipes.
1/2 C roasted bell pepper
15 oz garbanzo beans (drained with liquid reserved)
1/3 C tahini paste
1/4 C sundried tomatoes packed in oil
2 TB fresh lemon juice (this time of year I love to use Meyer Lemon!)
1 TB fresh garlic, minced
1 TB oil from sundried tomato jar
1/2 tsp sweet paprika
a few shakes Cry Baby Craigs hot sauce
salt and black pepper to taste
Place all items in food processor and buzz until smooth.
Add a little of the reserved liquid from the garbanzo beans if needed.
Smokey Black Bean dip
15 oz black beans drained and rinsed
2 TB olive oil
2 TB fresh squeezed lime juice
1/2 tsp lime zest
1 tsp minced garlic
1/2 tsp smoked paprika
2 TB cilantro
a few TB warm water (if needed)
Place all items in food processor and buzz up until smooth.
Drizzle in a little water if too thick.
Both are good served with veggies, pita bread, tortilla chips etc.
