Sips & Soups

Our Director of Programming, Mandy Tadych, shares two of her favorite slow cooker soups and beers from 10K Brewing to pair with them.  10K Brewing is a microbrewery in the heart of Downtown Anoka off of Jackson Street. They offer 10-20 unique brews that range from light, malty, hoppy and dark. They do not distribute so you can only find their product at their Taproom in Anoka.

Beer Baked Potato Soup

Ingredients:
1 30oz bag of frozen hash browns
1 32 oz box of chicken stock
1/2 can of your favorite beer
1 can of cream of chicken soup
5-6 strips of bacon – cooked & crumbled
2-3 shakes of Cry Baby Craig’s hot sauce
1 8oz package of cream cheese
salt & pepper to taste

Toppings: shredded cheese, green onions, bacon

Directions:

Put hash browns, chicken stock, cream of chicken soup, beer, hot sauce and half of the bacon in the slow cooker.   Add some salt & pepper.  Cook on low 7-8 hours until potatoes are tender.   An hour before serving add the cream cheese.  Use an immersion blender if needed to cream the soup before serving.   Top with cheese, green onions and bacon.

Creamy White Chicken Chili

Ingredients:
1lb chicken thighs
1 can of Rotel tomatoes
1 can of white chili beans in sauce
Chopped pickled jalapenos to taste
1 package of ranch dressing mix
1/2 large onion diced
2-3 garlic cloves minced
1 Tbsp of olive oil
1 Tbsp. chili powder
1 Tbsp. cumin
3/4 cup of chicken stock
1 8oz package of cream cheese

Toppings: shredded cheese, cilantro, avocado

Directions:

Heat olive oil in small pan and add onions.  Cook until softened then add garlic, cumin and chili powder.  Cook for 1 minute.   Add onion mixture, chicken thighs, tomatoes, beans (do not drain), chopped jalapeños, ranch dressing and chicken stock to slow cooker.   Cook for 7-8 hours on low.   An hour before serving add the cream cheese.  Top with cheese, cilantro and avocado.
