Elizabeth’s kitchen is finally finished and she recently made Bernie’s Favorite Carbonara and posted it on her Instagram. Bernie paid a visit to Twin Cities Live to help Elizabeth make her favorite dinner.
1 lb dried spaghetti noodles
1 lb bacon, thick cut and chopped
4 large eggs
2 cups finely and freshly grated Parmesan
1/4 cup heavy cream
Fresh ground pepper
Chopped fresh flat leaf parsley
Cook pasta in salted boiling water according to package instructions.
Meanwhile, cook bacon over medium to medium high heat until browned and slightly crispy on the edges.
While bacon and pasta cook, combine eggs, cream, cheese and pepper in a large bowl. Set aside.
When bacon is cooked, let cool for a few minutes. Drain all but about 2 tsp of bacon fat (save for another dish!). Slowly pour the bacon and remaining fat into the bowl of eggs, whisking with a fork as you add. Do this slowly so the eggs don’t scramble!
When the pasta is done, drain it and add hot pasta directly to the bowl, tossing with tongs to coat with sauce. Cover the bowl with a plate and let stand about 5 minutes. Toss parsley on top and serve!
