Taste the Trend: Monkey Bread

The viral recipe channel, Tasty, posted a recipe for Monkey Bread Brie Fondue and it has since reached 6.6 million views. Recipe developer, Mary Jane Miller, gave the recipe an overhaul for a much better version.

French Onion Baked Brie

Prep Time: 30 minutes
Ready In: 45 minutes

2 slices bacon, finely chopped
1 onion, chopped
1 (8 oz.) wheel of brie
1 (14.1 oz.) pkg. refrigerated pizza dough (I like Wewalka Classic)
1 egg, beaten
Topping for crackers (sea salt, shredded Parmesan cheese, pepper, poppy or sesame seeds, etc.)
1 tsp. brown sugar
2 Tbsp. dry sherry
1 tsp. Worcestershire sauce
1/2 tsp. beef base (I like organic Better Than Bouillon)
1/2 tsp. dry thyme leaves
1/4 tsp. ground pepper
parsley, apple slices and grapes for serving

Heat oven to 425 degrees F.

In a medium skillet, cook the bacon until very crisp. Drain on paper towels. Remove all but 1 Tbsp. of the bacon fat.

Add the onions to the skillet. Sprinkle with sugar and cook over medium heat until tender and deeply golden brown, about 15 minutes.

Meanwhile Unroll the pizza dough on a baking sheet lined with parchment. Brush the dough with egg and sprinkle with toppings. Use a pizza cutter or sharp knife to cut the dough 6 rows by 8 into squares then into 48 triangles.

Place unwrapped brie in oven safe dish with a rim, like a pie plate. Place brie in oven on lower shelf and crackers on upper shelf. Bake 15 to 18 minutes or until crackers are golden brown and brie is softened.

Spoon bacon mixture over hot brie. Pull apart flat bread. Sprinkle the top with chopped parsely and serve with apple slices, grape clusters, and warm flat bread.

Makes about 8 servings

Notes: If you use a ball of pizza dough, roll out as thinly as possible on a lightly floured surface.
