12 Days of Cookies: Chocolate Snowdrift Cookies

It’s day two of 12 Days of Cookies and it’s Maddie Lu Carlos, the owner of Something Sweet by Maddie Lu turn!  She creates her Chocolate Snowdrift Cookies and she pairs it with Bridgeman’s Peppermint Krisp Ice Cream.

Chocolate Snowdrift Cookies

1 2/3 cups all-purpose flour
1 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup unsalted butter
1 1/4 cups granulated sugar
3/4 cup packed light brown sugar
2 large eggs
2 tsp vanilla extract
1 tsp peppermint extract
16 oz. white chocolate chopped into small pieces
1/4 cup crushed peppermint bits

Cream butter and sugars together on medium speed until light and fluffy. Add in your eggs, vanilla, and peppermint extract. Mix until combined. Add in all dry ingredients and mix on medium speed for 30 seconds, scraping the sides.

Bake at 350 degrees for 10-12 minutes or until the centers don’t look wet anymore. (I like these cookies soft so I under bake them a tad bit)

Once cookies cool, melt your white chocolate in the microwave or over a double boiler. Do not get your chocolate too hot. Stir often. Dip half the cookie in white chocolate and sprinkle your crushed peppermint over the top.
