12 Days of Cookies Day 9: Ooey Gooey Oatmeal Butterscotch Cookie

Elizabeth has strong feelings about a few strange things in life, one of them being that butterscotch doesn’t get the attention it deserves. That changes today when she visits Something Sweet by Maddie Lu in Coon Rapids to make Maddie’s family favorite Ooey Gooey Oatmeal Butterscotch Cookies.

Each of our cookie recipes is paired with a delicious flavor of Bridgeman’s Ice Cream this year. Maddie thinks you should try Bridgeman’s Butter Brittle Ice Cream with her butterscotch treats (and Elizabeth thinks they’d make a great ice cream sandwich!)

Ooey Gooey Oatmeal Butterscotch Cookies

2 eggs
1 cup brown sugar
1/2 cup granulated sugar
8oz butter
2TBLS vanilla
3 cups oats
1.5 cup flour
1 tsp baking soda
1/4 tsp salt
2 cups butterscotch chips


Cream together egg brown sugar, sugar, salt, butter, vanilla
Add dry ingredients saving the oats for last
Fold in the chips
Bake for 11 minutes @ 325. (all oven baking times will differ)
