At this time of year, it’s a tradition for Kelli to have a loaf (or two) of her mom Terri’s homemade pumpkin bread. She thought it was time that her husband learned how to make it too.
Terri’s (Kelli’s mom) Pumpkin Bread
3 c. sugar
1 c. oil
4 eggs
1 can pumpkin
3 ½ c. flour
2 tsp baking soda
2 tsp salt
½ tsp ground cloves
½ tsp cinnamon
½ tsp nutmeg
2/3 c. water
Directions
Mix together sugar, oil & eggs.
Add Pumpkin.
Sift in dry ingredients
Add Water
*bake at 350 for 1 hour
*makes 2 loaves
Kelli’s Gluten Free (healthier) version!
1 ½ cup sugar
1 ½ cup coconut sugar
1 c. applesauce
¼ c. oil
4 eggs
1 can pumpkin
3 ½ c. Gluten Free Flour (recommend Cup for Cup brand)
2 tsp baking soda
2 tsp salt
½ tsp ground cloves
½ tsp cinnamon
½ tsp nutmeg
2/3 c. water
Directions
Mix together sugar, oil & eggs.
Add Pumpkin.
Sift in dry ingredients
Add Water
