15 Minute Naan Bread

Indian Naan Bread

Chef and instructor Jessica Tijerina shows us a recipe for a 15 minute Naan Bread.

Cajun Naan – 15 Minutes (Great as a pita too!)

Yield:  2-4 Servings

Ingredients

260 grams self-rising flour (2 1/8 cup)
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon sugar
2 teaspoons Cajun spice blend (I use Tijerina Global Spices Acadian Cajun Spice Blend)
1 cup plain, full fat yogurt
2 teaspoons olive oil
1 tablespoon milk
3 cloves garlic, chopped
2 teaspoons lime zest
½ cup corn meal

Method

  1. In a large bowl mix together the flour, baking powder, salt, sugar, and Cajun spice blend.
  2. Make a well in the center and then add the yogurt, oil and milk and mix until combined and the dough no longer sticks to the sides of the bowl.
  3. Add in 1 clove garlic and 1 teaspoon lime zest.
  4. Knead for up to 5 minutes on a clean, dry surface.
  5. Cut dough into 2 or 4 pieces (depends on the size of your pan or griddle)
  6. Roll out the dough into oblong pieces (round is fine too).
  7. Lay a few pieces of chopped garlic, some lime zest and cornmeal on a clean, dry surface and roll each piece of the dough over the mixture to allow it to stick into the dough. (Just on one side)
  8. Heat a large pan on high and lay the dough in the pan until the surface bubbles and the underside is golden brown, then flip and cook 1 more minute.
  9. Remove from heat and brush with olive oil or ghee and sprinkle with more Cajun/lime zest and corn meal. 
  10. Serve immediately.

Masala Chai Naan – 15 Minutes (Try it as a breakfast wrap!)

½ teaspoon salt
1 teaspoon sugar
1 tablespoon Instant Chai (I use Tijerina Global Spices Vanilla Masala Chai Blend)
1 cup plain, full fat yogurt
2 teaspoons olive oil
1 tablespoon milk
2 tablespoons vanilla sugar
1 teaspoon cinnamon

Method

  1. In a large bowl mix together the flour, baking powder, salt, sugar and chai.
  2. Make a well in the center and then add the yogurt, oil and milk and mix until combined and the dough no longer sticks to the sides of the bowl.
  3. In a small bowl combine vanilla sugar and cinnamon and set aside.
  4. Knead for up to 5 minutes on a clean, dry surface.
  5. Cut dough into 2 or 4 pieces (depends on the size of your pan or griddle)
  6. Roll out the dough into oblong pieces (round is fine too).
  7. Sprinkle a tablespoon of the cinnamon/vanilla sugar mixture on a clean, dry surface and roll each piece of the dough over the mixture to allow it to stick into the dough. Both sides is ok.
  8. Heat a large pan on high and lay the dough in the pan until the surface bubbles and the underside is golden brown, then flip and cook 1 more minute.
  9. Remove from heat and serve. 
  10. Serve immediately.

Garlic Naan – 15 Minutes

1 teaspoon Garam Masala (I use Tijerina Global Spices Garam Masala Spice Blend)
1 cup plain, full fat yogurt
2 teaspoons olive oil
1 tablespoon milk
6 cloves garlic, chopped
½ cup cilantro, rough chopped

Method

  1. In a large bowl mix together the flour, baking powder, salt, sugar and garam masala.
  2. Make a well in the center and then add the yogurt, oil and milk and mix until combined and the dough no longer sticks to the sides of the bowl.
  3. Add in 1 tablespoon garlic.
  4. Knead for up to 5 minutes on a clean, dry surface.
  5. Cut dough into 2 or 4 pieces (depends on the size of your pan or griddle)
  6. Roll out the dough into oblong pieces (round is fine too).
  7. Lay about 1 teaspoon chopped garlic on the clean, dry surface and roll each piece of the dough over the garlic to allow it to stick into the dough.
  8. Heat a large pan on high and lay the dough in the pan until the surface bubbles and the underside is golden brown, then flip and cook 1 more minute.
  9. Remove from heat and brush with olive oil or ghee and sprinkle some of the cilantro on top. 
  10. Serve immediately.
